Assessing the quality of beans is a rigorous process, regulated by the standards of the Specialty Coffee Association (SCA). The beans are assessed in their raw (green) state, before roasting. The analysis includes, among others:

  • bean size – larger and more uniform beans are considered easier to roast and grind evenly,
  • presence of defects – even minor damage to the beans affects the later flavor profile of the coffee,
  • moisture and density – these are parameters that affect the quality of storage, but also roasting and extraction,
  • sensory evaluation after roasting – the aroma, sweetness, acidity, balance, body and purity of the brew are assessed.

Grade 1, or specialty coffee, requires the absence of any first-degree defects and may have a maximum of five minor defects in a 350g sample. In turn, grade 2 – premium coffee – allows for up to 8 minor defects and individual first-degree defects, such as the so-called quakers, or immature, lighter beans that do not reach their full flavor even after roasting.

In practice, this means that premium coffee still offers very high quality – especially compared to industrial coffees, which may contain numerous defects, be a mixture of beans from different continents and be characterized by low transparency of origin.
